Question about Adafruit FT232H Breakout USB to GPIO+SPI+I2C

I would like to install an e-ink monitor with hardware temps etc. for my PC. Is it possible to build something like this with this breakout board and an ISP monitor via usb with the software openhardwaremonitor on windows? Is there a better way?

Oof. If you have such questions, it might be better to ask the Adafruit community. They are more specialised in dealing with boards and software. Assuming you have the necessary English skills.
