I have all 3 device variants in use at various locations and it would be completely new to me if the small USG was no longer updated via controller and thus end-of-life or "no longer up2date"... For the upgrades (except for one location with UDM-Pro) I also use my own Ubuntu VM with installed Unifi controller software and keep different generations of USG and switches up2date without any problems.

since i have no idea what your it knowledge is... i assume that the "swisscom side" has 192.168.x.x address range... have you configured the usg so that it is in a different network ip-wise? can you ping your default gw from the usg? there can be about 1000 things wrong somewhere.

According to https://www.sunrise.ch/content/dam/sunrise/residential/hilfe/internet/Sunrise_Home_Handbuch_Sunrise_Internet_Box_neue_firmware_d.pdf it should be possible to set the router to bridge mode.

The phones only work with the Wingo Internet Box. With DSL, the USG is also not suitable as a replacement, as you need a VDSL or G.DSL-capable device. See https://www.wingo.ch/de/kann-ich-fuer-wingo-internet-meinen-eigenen-router-verwenden You will therefore have to operate the USG behind the Wingo Box. I have also solved this problem including TV.

It depends on what you want to do. By default (i.e. from the controller software) you can use the second LAN (or WAN2) interface only for failover purposes, otherwise you have to create a config.gateway.json file that configures the port (see various discussions in https://community.ui.com). Otherwise, work with separate VLANs (if the DMZ is virtualised), or use the Salt router as the outer router and the Ubiquiti as the inner router (with or without NAT).

Is that a question or a statement? Regarding the CH power cable, I can't shake the feeling that they occasionally avoid including an adapter, which they really should ;-) I have already contacted Digitec customer service for various products where this was the case and it was delivered free of charge. But yes... it should have been included right from the start.

If the MR600 behaves like a normal router, I don't think there is anything wrong with it. I operate the ISG on 2 routers in parallel, with failover in case the first one drops out. One of them is a cable modem from UPC, the other a Fritzbox.

I also use Unifi infrastructure in my home network. The Unifi firmware updates sometimes affect the WLAN performance, but the switches and gateway have never had any problems in my config. Have you already measured the wired performance directly behind the router?

yes and no ^^ you can use both devices but then you have double nat which isn't really great and won't do you much good. noramlerwise you use a different router and don't connect two together for that but you would have to swap your centro with an ftth converter so that the public ip is on the security gateway. it would be easier if you could say what you want to achieve with this or why you want this product? because it is probably the wrong one :)
