Yes, that will be quite enough! You can even use Whatsapp to make calls. For video, on the other hand, the bit rate is too low. It's a perfect solution for checking public transport timetables or weather forecasts, for example. Provided you have a smartphone that supports 2 SIM cards so you can make calls with the other one.

Hey Diggel, yes that is possible. The SIM card can be left inactive for up to 6 months. The pause is actually just "no automatic renewal" and therefore starts after the current month has expired.
