Pure sensuality. Vanilla is obtained by fermenting the fruit capsules of the vanilla orchid. It has a creamy-sweet flavour that unfolds in a slightly floral perfume note and is used almost exclusively for desserts in Western circles. It harmonises particularly well with rice pudding and the like - but be bold: season salty and spicy dishes with it. Chicken, Mexican bean dishes, curries and scallops benefit greatly from its flavour. Go for it.
