Properties: More than just a sneezing powder. To produce white pepper, the black, fully ripe fruits are harvested and then soaked in water for about a week. During this process, the mesocarp, the outer shell, breaks down and separates from the endocarp. While the shell mainly contains sugars and volatile aromatic compounds, all the heat resides in the endocarp. Therefore, white pepper contains the full spiciness of black pepper but is less aromatic. It pairs very well with poultry, fish, and light sauces, but should be used sparingly due to its heat.
