Place a sheet of nori with the matte side facing up on the bamboo mat. Evenly spread a thin layer of cooked sushi rice over the nori, leaving 7 cm at the top edge empty. Add the fish and/or vegetables in the center of the rice. Carefully roll the nori away from your body using the bamboo mat, pressing the filling into the center. Moisten the free end of the nori sheet with water and seal the roll tightly. Remove the roll from the mat and cut it into 5 pieces with a damp, sharp knife.
