Description
Agar Agar is usually harvested by divers who cut the seaweed directly from the ocean floor. It is then dried in the sun and stored in bales for up to several years. For further processing, the seaweed is washed and an extract is made using hot water. This extract is cooled, gels, and is further concentrated and cooked down through mechanical pressing. The resulting powder is ground and packaged.

For thickening sauces, preparing pâtés, creams, cake glazes, and for Asian dishes.
Preparation Instructions:
Use 1 teaspoon for ½ liter of liquid or 500 g of fruit; for stable pâtés and puddings, use 2 teaspoons. Mix Agar Agar cold and lump-free, then boil for about 5 minutes while stirring constantly. Fold in whipped cream only when it begins to gel.
