Product details

Pearled sugar in small grains (4-5 mm) is perfect for sprinkling on chouquettes, tropical tarts, craquelins, biscuits, and pastries. This cream in grains resists cooking and remains white and uniform. Known as sucre casson or sucre perlé, it is a subtle blend of crunchy and fondant textures. It is produced through the agglomeration, grinding, and sizing of crystal sugar. Easy to use, it can be incorporated directly into the dough or sprinkled on before or after baking.
