What is gelatin?
Fish gelatin is a gelling and thickening agent used in patisserie to give stability to Bavarois, mousses, charlottes, etc. It is used for dessert creams, whipped cream, or jellies. Since it is in powdered form, it can be easily dosed. In the kitchen, fish gelatin is used for jelly eggs, aspic, terrines, and more.
