In Japan, natto is a delicacy and is often eaten for breakfast, for example, with rice, spring onions, soya sauce and mustard. Natto is made from briefly boiled soya beans, which are fermented after cooking according to a traditional recipe. Various types of natto are known in Japan. Our natto products are Itohiki-Nattō, which is carefully prepared by experienced natto chefs from whole steamed soya beans with Bacillus subtilis ssp. natto. The finished and fresh natto is then gently freeze-dried and ground. Natto tastes nutty, sweetish and perhaps a little bitter. In any case, natto has character and some people may have to get used to it. We like its flavour and use it almost everywhere, as the mood takes us.
