Demerara raw cane sugar has a slightly malty flavor due to its higher molasses content, which is also evident in its intensely golden color. The sugar crystals are larger than those of other types of sugar.
Demerara raw cane sugar is cultivated by organic farmers in Brazil or India. The climatic conditions in South and Central America, as well as in India, are optimal for sugarcane cultivation. Since sugarcane must be processed immediately after harvesting, Naturata sources the raw material from regions where there is a sugar mill capable of producing the specific type of sugar. After harvesting, the sugarcane is stripped of its leaves, chopped, crushed multiple times between simple rollers, and then pressed. The fibrous parts are filtered out. After cleaning, the sugarcane juice is concentrated at low temperatures and under slight vacuum. The highly concentrated syrup is then mixed with a few crystals of unrefined sugar, allowing the sugar to crystallize. Once the sugar crystals reach a certain size, they are separated from the remaining syrup, dried, sifted, and packaged. Therefore, the molasses content is lower than that of Sucanat whole cane sugar.
