Properties
NATURATA olive oil from Crete P.D.O. carries the designation of "extra virgin" and guarantees the highest quality based on various characteristics. Only mechanical methods are used for oil production. The acidity level must not exceed 0.8 g per 100 g of oil, and the peroxide value must be a maximum of 20. Additionally, there must be no sensory defects. The acidity level indicates the proportion of free fatty acids (calculated as oleic acid). The longer an olive is stored between the ideal ripeness and processing in the oil mill, the higher the proportion of free fatty acids becomes. The lower the proportion of free fatty acids, the better the quality of the oil. A low peroxide value also indicates a quick processing of the olives and a fresh oil.
