Product details

Potash is used as a leavening agent for various flat baked goods such as cookies, biscuits, or gingerbread. It ensures that even heavy dough rises nicely. The difference from yeast or sourdough is that the dough spreads more horizontally than it rises vertically. Just like cornstarch, potash must be dissolved in water, milk, egg whites, or cream. This allows the potash to be better distributed throughout the dough.
