What do I do with the egg white if I only need the yolk? The egg white is too good to throw away, so we have a natural alternative to fresh egg yolk for your delicacies. Pasteurised egg yolk powder is mixed with water and can then be used like fresh egg yolk and whipped into a mousse, for example. Add 7 g of the powder and 14 g of lukewarm water and mix the mixture. This amount corresponds to one egg yolk.
