Did it get its name from the hills where it grows in India, which run along the coast of Malankara? That is uncertain. In any case, cardamom, which originally comes from this region, is also cultivated in Cambodia and Sri Lanka, and has been grown in Guatemala for several decades. This spice was already used in ancient Greece and Rome, where it was valued for its digestive properties and its ability to freshen breath. Cardamom is cultivated for its fruits, which contain dark brown seeds with a warm, camphor-like flavor. After the flowering period of the plant, the capsules are harvested by hand, with each containing about twenty aromatic seeds.
