Mace, also known as nutmeg flower, is the dried seed covering of the nutmeg fruit (Myristica fragrans). The nutmeg tree can grow up to 20 meters tall, but it only bears its first fruits after about eight years. These fruits, roughly the size of apricots, contain the nutmeg inside, which is enveloped in a bright red seed covering – this is referred to as mace after drying. In the Middle Ages, it was mistakenly believed to be the actual flower of the tree, which is why the name "nutmeg flower" has persisted to this day. My mace comes from Sri Lanka, where the nutmeg trees slowly ripen under the tropical sun, and the flower coverings have been traditionally harvested and processed for generations.
