Andaliman pepper (Zanthoxylum acanthopodium) is exclusively found in the highlands of North Sumatra. It grows wild in open forests and has been traditionally used by the Batak people for centuries—especially in fish dishes, soups, or fermented foods. Botanically related to Sichuan pepper, it is finer and more citrusy—or rather: reminiscent of fresh mandarins—with a distinct character and a subtle tingling sensation on the tongue. In Europe, Andaliman is still relatively unknown—a spice for explorers.
