Champagne Rye, 780g
Preparation:
Pour the contents of the bottle into a bowl and add lukewarm water. Knead everything by hand or with a dough hook (about 3-4 minutes) until the dough easily pulls away from the bottom of the bowl.
Let the dough rest covered with a cloth in a warm place for about 10 minutes. Then punch down the dough (knead again). Shape into two small loaves and place them on a baking sheet lined with parchment paper or in 2 small greased loaf pans. Cover and let rest in a warm place for about 20-30 minutes until the volume has doubled. Then lightly brush with water, optionally score the top or sprinkle with seeds or flour. Bake in a preheated oven at 200 degrees Celsius (fan) for about 30-40 minutes until golden brown.
Tip: Place 1 cup of water in the oven while preheating. This helps the bread rise better.
