The Ume apricot, from which Ume-su vinegar is also derived, is grown in Japan and has a strong, slightly sour flavor. It is fermented in a sea salt brine with Shiso leaves for about a month, which gives it a beautiful red color. Umeboshi contains whole Ume apricots that can then be cut into small pieces.
