Traditional wide noodles made from whole grain buckwheat
An extremely careful production process is essential for good Soba noodles: The grain is ground multiple times, resulting in a flour so fine that the noodles, despite being made from whole grain, achieve a very soft texture. The dough is then kneaded for a long time and slowly rolled out into thin layers. The master craftsman can then cut it into strips without compressing it. These strips are finally dried for at least 48 hours in a ventilated room. No artificially heated air is introduced to preserve the quality of the noodles.
Usage
These Japanese noodles are just as delicious served warm in a soup or with a hearty sauce or sautéed vegetables as they are cold in fresh summer salads.
