Description: Soba 40%: Noodles made from a blend of whole wheat flour (59%) and whole buckwheat flour (40%). The nutritional richness of the noodles from wheat and buckwheat (proteins, lysine, magnesium, potassium, zinc, iron, B vitamins...) justifies the consumption of these noodles. The natural wheat flavor and the unique taste of buckwheat are equally compelling. Extremely careful production is essential for good soba noodles: the grain is ground multiple times, resulting in flour that is so fine that the noodles, despite being made from whole grains, have a very soft texture. The dough is kneaded for a long time and then slowly rolled out into thin layers. The master craftsman can then cut it into strips without compressing it. These strips are finally dried in a ventilated room for at least 48 hours. No artificially heated air is supplied to preserve the quality of the noodles.

Usage: The Japanese noodles are delicious served warm in a soup or with a savory sauce or sautéed vegetables, as well as cold in fresh summer salads. Do not add salt to the cooking water, as the noodles already contain it.
