Miso, a fermented soybean paste (sometimes combined with grains), has been known for its culinary benefits and positive health effects in the Far East for 1,300 years. Hatcho Miso, which undergoes an exceptionally long fermentation process lasting 24 to 30 months, is a true food concentrate. All high-quality misos are rich in protein, but Hatcho Miso contains 80% more protein and 20 to 25% less salt than premium misos made from rice or barley. This unique source of essential amino acids, minerals, and vitamins is low in calories and fat while being high in fiber. Miso can be used in a variety of dishes to enhance their flavor, much like a bouillon cube—in soups, sauces, spreads, vegetable platters, and for preparing vinaigrettes, among others. Simply mixing a small amount with a bit of water makes it easy to use.
