Preparation:
Sauces: Reduce the stock by half. Whisk in butter until the desired consistency is reached. The sauce can be seasoned by adding a bit of wine or fresh herbs.
Soups: Add vegetables or other ingredients to the stock according to a recipe or your preference. Fish stock is excellent for all fish dishes and white meat. It enhances soups, jellies, or aspic. Suggestions can be found on all Lacroix Fonds labels.
