KoRo Almond Puree White

What is the difference between white and brown almond paste? Quite simply, in white (also known as light-coloured) almond paste, peeled almond kernels are processed into a creamy paste. Brown almond paste uses unpeeled almond kernels. For white almond paste, only lightly roasted almonds are used. Instead of processing them at high heat, they are gently blanched, lightly roasted and then turned into a fine, light-coloured almond paste. Recommended use: White almond paste is a great spread. But that's not all: it is also ideal for flavouring and refining sauces, dips and even smoothies. It is also ideal for baking and as a topping in your muesli.
