The porcini mushroom, the oyster of the forest, is probably the best-known and most sought-after edible mushroom because of its excellent, deliciously nutty taste. After opening the tin, the porcini salt smells very earthy. This is not a flaw, but a common characteristic of dried porcini. After cooking, the dried and finely ground porcini unfolds its full aroma. Even though porcini are edible raw, it is recommended to use our porcini salt under heat. Without a liquid in which the porcini powder can soften, the flavour remains a little earthy and too weak. So simmering is the order of the day.
