Acacia honey actually comes from the black locust tree, also known as false acacia. During the short flowering period in May and June, bees collect nectar from the fragrant white flowers of this tree, which can grow up to 25 meters tall, resulting in a distinctly mild and sweet honey. Acacia honey contains a particularly high amount of fructose, which is why it remains liquid for a very long time. Due to its subtle flavor, it is especially suitable for sweetening tea, muesli, and desserts.
