Galgant belongs to the ginger family and is often used as a substitute for pepper and paprika due to its spicy heat. It leaves a hearty, invigorating sensation. The ginger-like, lemony aroma is suitable for Asian dishes such as curry stews, as well as for seasoning fish and meat. It is a significant spice in the teachings of Hildegard of Bingen. In the cold season, it is consumed with raspberry juice as galgant-raspberry water.
