From the varieties Arbequina, Cobrançosa, Cordovil, Frantoio, Galega and Carrasquenha. The varieties are transported separately and the processing takes place immediately after the harvest. The olives are ground, then the paste is stirred so that the oil runs out. In the settling vat, the oil is separated from the pulp and water, purified by centrifugation, finally filtered and packaged. The extraction is carried out cold and the temperature never exceeds 27 °C.
