The Tripoline, which have the shape of a one-sided curled ribbon, belong to the family of long and curled Pasta Secca (made from durum wheat semolina and water). Their geographical origins lie in the Campania region. However, popular tradition claims that this type of pasta was created in Naples in honor of King Victor Emmanuel. Their unique shape ensures that the sauce primarily clings to the curled part rather than the smooth part. One characteristic that all curled pasta varieties share is that the two different surfaces exhibit a different texture after cooking. Tripoline are excellent for preparing pasta dishes with meat sauce. Recommended sauces include those with a strong and bold flavor, such as meat sauces made with game or chicken giblets.
