They originate from the Campania region and belong to the family of particularly short pasta with a straight cut. In the past, Fusilli were handmade according to a method passed down from mother to daughter. This involved quickly and skillfully wrapping a spaghetti strand around a knitting needle. The dexterity required for this task is reminiscent of spinning machines, and indeed the term "fusillo" is derived from "fuso," the typical working instrument of spinning machines. They taste great with meat sauces, as well as with fish sauces and sauces made with ricotta. They can also be served with vegetable sauces prepared with tomato sauce and the addition of peppers, eggplants, zucchini, olives, and capers.
