The naturally cloudy apple cider vinegar (5% acidity) from Byodo is made from freshly harvested, juicy apples. After harvesting, the apples are pressed to obtain juice, which is then fermented into vinegar at warm temperatures. This process is known as continuous vinegar fermentation.
To preserve the full fruit flavor, this fine organic vinegar is not filtered before bottling. The Byodo apple cider vinegar, naturally cloudy, has a wonderfully full-bodied taste and pairs excellently with crisp salads and Asian cuisine.
Like all Byodo vinegars, it is completely natural and unheated. This way, valuable enzymes and flavor compounds are retained in a delicious manner. Cloudiness or sediment at the bottom of the bottle, as well as possible flocculation, do not indicate a loss of quality. On the contrary! They are a sign of the natural production method of this organic product. The so-called vinegar "mothers" can simply be strained out, and the vinegar can be used normally.
