Chili peppers with thin walls, such as Birdseye chilies, can usually be preserved simply by drying. However, we don't overlook their thick-fleshed relatives either. These can be smoked, much like fish and meat, to extend their shelf life. What originated out of necessity has long since become a cultural phenomenon. Without smoked jalapeños, also known as chipotle chilies, Mexican or Texan cuisine would undoubtedly lack its identity – and we would miss the wonderfully smoky and spicy flavor notes that complete our culinary experience.
