Chimichurri, the spicy herb sauce from Argentina, has captivated us as well. Since it can be made from both fresh and dried ingredients, you can decide whether to enhance our spice blend further. A good vegetable oil and a few pinches of salt are essential. For an extra freshness kick, add freshly squeezed lime juice. The sauce tastes best after it has rested in the refrigerator for a few hours. In some parts of Argentina, it is even served after two weeks. Perfect for beef, and amazing on a dry-aged rump steak.
