Black garlic (2 whole bulbs) is one of the oldest crops in the world, known for its health benefits. Unlike raw garlic, it is easily digested, has a moist, soft texture, and a subtly sweet flavor, earning it the nickname "garlic of lovers." Black garlic is produced by ripening fresh garlic through a process of caramelization, not fermentation. The garlic is kept for 10 to 15 days at a constant temperature between 50 and 75 °C with humidity levels between 70 and 95%. At the end of this process, the garlic becomes candied and takes on an anthracite black color. Its taste is reminiscent of licorice, balsamic vinegar, and candied fruit, making it a top product in fine gastronomy. As a natural tonic, it is considered a champion of superfoods.
