Gaïhamsa Black garlic

Black garlic (2 whole bulbs) is one of the oldest cultivated foods in the world, known for its health benefits. Unlike raw garlic, it is easy to digest, has a moist, soft texture and a subtly sweet flavour, earning it the nickname "love garlic". Black garlic is produced by curing fresh garlic using a caramelisation process, not fermentation. The garlic is stored for 10 to 15 days at a constant temperature between 50 and 75 °C and a humidity of 70 to 95 %. At the end of this process, the garlic is candied and takes on an anthracite-black colour. Its flavour is reminiscent of liquorice, balsamic vinegar and candied fruit, making it a top product of fine gastronomy. As a natural tonic, it is considered the champion of superfoods. Living cuisine focuses on recognising the full energetic potential of food and applying respectful transformation processes. Only natural and organic ingredients are used that have not undergone any treatment or transformation. These preparation methods include sprouting, drying and dehydrating at 42 °C. The sprouted sunflower seeds are combined with spices, herbs and fresh vegetables, all of which are dehydrated at low temperatures to preserve their vitality and micronutrients.
