The whey produced during cheese making primarily contains five groups of substances: carbohydrates (milk sugar 75%), proteins (13%), minerals (8%), water (3%), and fat (1%). Milk sugar (lactose) is considered a valuable sugar substance that is broken down into glucose and galactose upon absorption in the body. This forms a good foundation for the development of beneficial bacteria in the digestive tract. Whey proteins are of very high quality and have maximum biological availability (albumin and globulin). Additionally, the proteins in whey are structured to contain eight important essential amino acids (isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine). Calcium is an essential mineral for the formation of bones and teeth. Magnesium is crucial for normal muscle function and energy metabolism.
