The whey produced during cheese making contains essentially five groups of substances: carbohydrates (milk sugar 75%), protein (13%), minerals (8%), water (3%), and fat (1%). Milk sugar (lactose) is considered a valuable sugar substance that is split into glucose and galactose upon absorption in the body. This creates a good foundation for the development of beneficial bacteria in the digestive tract. Whey proteins are of very high quality and have maximum biological availability (albumin and globulin). Additionally, the proteins contained in whey are structured in such a way that they include eight important essential amino acids (isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine).
