With the winemaker's refractometer, you can determine the sugar content of the must and thus the potential alcohol content of the wine. The most important unit displayed on the refractometer in Germany is Oechsle (°Oe). In other countries, KMW, Babo, KMN, Baumé, and Brix are commonly used. The winemaker's refractometer displays °Oechsle, sucrose, and KMN/Babo on its reading scale. All these units measure according to the same principle, where 16.5 g of sugar results in approximately 1% alcohol. In Germany, the must weight is an important quality and classification criterion for the wine's designation.

In Germany, the Pforzheim mechanic Ferdinand Oechsle invented the eponymous hydrometer in the early 19th century, which determines the specific weight of the must. 1 °Oechsle on the winemaker's refractometer scale corresponds to a specific weight that is 1 g/kg higher than that of water: it is therefore 1.001. In Austria, August von Babo developed the Klosterneuburg must scale. This must scale indicates the sugar content in the grape must in weight percentages. The conversion to Oechsle degrees is quite accurately possible using the formula "1 KMW = 5 °Oe."
