Can I choose Swisscom as my eSim provider or do I have to use Digitec Connect?

You can freely choose any provider. The Watch does not have a SimLock like most prepaid phones. Basically, this applies to all freely purchased mobile phones/watches - they work with all providers, as long as they support the brand.
