Hello everyone. I already have the Elemnt Roam. The speed is displayed there. I assume this is measured via GPS. Will the speed be more accurate with the sensors or what do I need them for?

It is simply an alternative way of measuring and helps when the GPS signal is poor. In addition, the measurement via the front wheel is somewhat more reactive when registering changes in speed (my impression). I have an Elemnt Bolt and use both signals. Advantage: calibration of the speed sensor is not necessary, it seems to be calibrated via the Bolt.

After setting up the sensors with the Wahoo app, can they also be connected to the Apple Watch Ultra to provide the data for the Apple Watch's training recording?

Yes, but you won't have any wattage. It's only cadence and speed-based.

Can the speed sensor be mounted on the rear wheel hub?

The manufacturer states that this product should be installed on the front hub. Therefore, we cannot guarantee that it is possible to install this product on the rear.
