This book is divided into four chapters, each describing different types of microorganisms that have been studied and used for the production of various metabolites of industrial interest. Each chapter outlines the general characteristics of bacteria, fungi, yeasts, and algae, as well as the cultivation conditions necessary for the extraction of compounds such as antimicrobial agents, antibiotics, hormones, vitamins, amino acids, enzymes, food additives, biopolymers, alcohols, and others. A compilation of scientific information has been made with the aim of highlighting the potential applications of microorganisms and the conditions required to achieve higher yields of metabolites at lower production costs and in shorter timeframes. It is emphasized that the microorganisms used should be in pure culture and that the culture media must be economical. Furthermore, an industrial microorganism should preferably be non-pathogenic to humans, animals, and/or plants, and if the microorganism is genetically modified, it should be stable and capable of growing in large cultures.
