Product details

On an alpine pasture in Ticino, Meret Bissegger's passion for all edible wild plants was awakened. After more than 30 years of delighting her restaurant guests with gourmet menus featuring wild plants and leading foraging and cooking courses, her first book on the subject is now being published. More than 60 plants are described and presented with images. It showcases locations, identifying features, potential confusions, the correct way to harvest, and their use in the kitchen. This has resulted in a guide and cookbook with 130 easy-to-follow recipes: dips for aperitifs, starters, salads, soups, risottos, pasta, oven dishes, delicious sides, and wonderful desserts. The featured plants are organized botanically in the book and labeled with their Latin and German names. The most important plant families are introduced in additional chapters with examples. Hans-Peter Siffert has beautifully photographed the dishes, capturing the beauty of the "weeds." Additionally, the book is illustrated with photos of Ticino landscapes and Meret's course kitchen. The book is being released simultaneously in Italian by Edizioni Casagrande in Bellinzona.
