Jenny Sprenger-Seyffarth provides the first comprehensive account of the emergence of these public catering services and their development beyond the war. In doing so, she explores the question of the extent to which public mass catering brought about a lasting change in the population's meal intake. Did mass catering remain an episode born out of wartime necessity or did it push back private family meals? Both metropolises provide different answers here.
