Fischprotein-Hydrolysate: ein Überblick

The exploitation of natural resources and the increasing environmental pollution have led to the necessity of utilizing by-products and fish species with low added value for the development of high-value products. Many studies have used underutilized species to extract myofibrillar proteins, protein isolates, and hydrolysates, which can be considered high-value products. Fish protein isolates have demonstrated good functional properties for use in various food formulations and also in the production of hydrolysates, as they reduce the content of pro-oxidative compounds that can impair their stability. These processes can result in protein hydrolysates with good bioactive properties, such as antimicrobial, antioxidant, and anticancer effects. Proteins contain biologically active peptides that are inactive within the protein sequence but can be released during processes such as enzymatic hydrolysis.
