Social values originally played a central role in organic farming. However, due to the competitive pressure from conventional grocery retail and discount stores, the value orientation has changed. New players and market partners have emerged, bringing with them entirely different value concepts. As a result, the organic market is increasingly differentiating itself. In light of these developments and the accompanying new customer needs, the organic market faces new challenges. A holistic approach is needed to rethink the relationships between partners along the value chain and to refocus on the original value orientation using criteria of social sustainability and fairness. This approach offers significant potential for tapping into new buyer groups in the organic market. Nevertheless, the understanding of what fairness and social sustainability specifically entail varies widely due to increasing differentiation. This book discusses and categorizes relevant indicators for measuring these criteria of fairness and social sustainability.
