Various monographs and essays have been published on the Middle Ages and the period of the early modern period, which has been narrowed down for the purposes of this thesis, and they take different research perspectives. For the large complex of agriculture, Wilhelm Abel should be mentioned above all, who dealt intensively with the German-speaking area and provided fundamental insights for this work. The publications of Günter Wiegelmann were equally essential. In recent decades, the historian has focussed in particular on the socio-cultural changes in food and table culture. With regard to the social conditions and the resulting consumption habits of the individual social classes, reference should also be made to the anthology 'Essen und Trinken in Mittelalter und Neuzeit' (Eating and Drinking in the Middle Ages and Modern Times) edited by Irmgard Bitsch and Trude Ehlert.
