The Swabian Cookbook is a classic: 444 home recipes that remain extremely popular to this day. These Swabian specialties taste excellent and are easy to prepare. It is also very contemporary: the author belonged to a generation for whom having an abundance of food was not a given. Therefore, a focus of her cookbook is on utilizing animals as comprehensively as possible, as well as using food scraps. In addition to delicious dishes like Spätzle, Maultaschen, and Eierhaber, it also includes recipes for traditional foods such as baked brain with cheese, veal head in sauce, or ox tongue salad – and for the ingredients, there are frequent notes like "scraps" – all the way to leftover soup – or "from the day before." With this book, Ursula Grüninger demonstrates how easy it is for anyone to take a step away from a throwaway society – and how good it can taste, in line with the motto: "En Guada!".
