French fries, fried potatoes, croquettes, mashed potatoes, boiled potatoes, dumplings, but also chips and even schnapps are made from or with potatoes – and this is just a tiny selection of the possibilities. No other food can be used in the kitchen in such a diverse way. Whether as a soup or salad, as a main dish or side, even as a pastry, whether grilled, boiled, baked, or fried, with or without skin, whole or chopped – the variety of potatoes seems almost inexhaustible. They are also inexpensive and available all year round. Therefore, this originally American vegetable has developed over the centuries into the most commonly used food in Germany. Even the nearly 120 recipes in this book can only provide a small insight into the possibilities of international potato cuisine.
