Ayurveda, the oldest naturopathy in the world, is a comprehensive doctrine of healthy and correct living that considers both physical and spiritual aspects. In Ayurveda, medicine and nutrition are not separated; food is also seen as a remedy. Over centuries, a vast knowledge about the effects of food and spices, the recognition and healing of diseases, and ways to health care has developed, which is still practiced in Indian families. Interest in the ancient Indian health teachings of Ayurveda and their holistic approach is also growing in the West.
According to Ayurveda, the key to health lies in maintaining or regaining one's personal balance. The aim of Ayurvedic nutrition is to nourish the body, mind, and soul, filling them with vitality. Each person requires a different diet tailored to their constitution, metabolism, and lifestyle, which balances the body, ensures good metabolism, and facilitates the elimination of waste products and toxins.
The foundation of Ayurvedic philosophy is the teaching of the five elements, which are associated with three vital forces known as the three Doshas: Vata, Pitta, and Kapha (Vata = ether and air, Pitta = fire and water, Kapha = water and earth). These three forces or bioenergies control all processes in the body and mind and determine the individual constitution type. It is rare for all three Doshas to be equally represented; usually, one or two Doshas predominate. An imbalance of the Doshas can lead to physical complaints and illnesses, as well as energetic disturbances such as inertia, lack of concentration, and nervousness. Therefore, Ayurvedic nutrition focuses on eliminating imbalances and restoring and maintaining personal balance according to individual constitution.
