A panel that is 160x100cm should be OK, right? Does anyone know what the minimum thickness of the board should be?

This should not be a problem, but I would strongly advise a table frame that has a lifting motor in each leg. The solutions with only one lift motor are exposed to greater loads and cannot lift as much.
The Fellowes system is not very expensive and allows the tabletop to be mounted without screws. The assembly is super easy, you only need to unfold the table legs and then attach the table top with the supplied assembly option. According to the manufacturer, this takes less than 2 minutes. The Fellowes Levando frame can accommodate table tops from 120 - 180 cm.
